When eggs are cooked, an unfavorable process referred to as glycoxidation occurs from the chemical reactions between glucose and proteins. If an egg is however lightly cooked (although be sure it&#039;s actually cooked) rather than fried forever, that is generally accepted as best for a diabetic person.  

If your eggs are prepared lightly, you&#039;re likely to experience a sense of fullness, and actually assist in balancing the glycemic index.</description>

I have seen several references to research of a few years ago which indicated that eating more than 2 eggs per week resulted in a lowered life expectancy for diabetics. Has there been any research recently which differed with this conclusion ?  Any info would be sincerely appreciated !</description>
