The Best Cookies You’ve Ever Had

Remember the dusty map that they found in the attic in The Goonies? I’ve found something just as valuable. I don’t even know where it came from. My wife claims a blond intern gave it to me but of this I have absolutely no memory, honest.
I’m not one for recipes but this one is magic (according to the paper it’s written on)! It will stop the itch. Stop the pain. Stop the inflammation. Well, maybe not. But I’ll guarantee this: it will stop the itch for cookies.
Don’t think that the healthy ingredients make this taste like a cardboard box. They don’t. These may be the best cookies you’ve ever had. If you need gluten free cookies heres my favorite from Elanas Pantry
Ingredients:
- 3 cups speltflour

- 3 cups sucanut
- 2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup melted butter
- 1 tbs vanilla
- 3 eggs
- 1 cup shredded coconut
- 1 cup raisins
- 1 cup chocolate chips
- 1 cup pecans
7 easy steps:
- Grease cookie sheet, preheat oven to 350 F
- Mix flour, salt and baking soda
- Mix butter, eggs, vanilla, sucanut and add to the dry ingredients
- Add remaining ingredients
- Form into lumps, put on sheet
- Bake for 10-14 min
- Renew your gym membership, you’ll need it
Note: I like to crumble the pecans up into little bits. Please please don’t use a sugar other than sucanut, I think its pretty key to the flavor.

I got several DM’s over twitter asking about sucanut. Its basically unrefined dehydrated cane juice which still has all the molasses and trace nutrients and minerals. It’s similar to brown sugar, but I think it’s much tastier. If you can’t find any, substitute brown sugar, they’ll still be amazing!
